One Year Ago Today...

One year ago today...

I was just going down Memory Lane and took a look back at what I accomplished a year ago today.

It's important to step back and look at the road traveled as opposed to how far you still have to go!  I have to say, looking back at this post I can't believe how far I've even come in just a year!

Take the time today to do this for yourself... it'll be worth it!

"I put in the time and effort day in and day out... I had the passion... I set my mind to it and now I'm finally standing at the end of the road.

Except it's not the end of the road at all.  The best part about completing this apprenticeship is that I now know how far I can actually push myself.  I know my boundaries, and I know they stretch so much farther than I ever could have imagined.  The absolute best part about this is that the rest of my life is just beginning and I can't wait." 

Here it is!  The big day!  I promised you all photos of everything that I did on my exam day... And here they are!

For those who don't know, our theme was "Ich habe eine Vision."  Translated: I have a vision...

My vision/ theme was based off of a quote, "Those who live see, but those who travel, see more."
I based my theme around my training as a pastry chef and the importance of visiting different cultures around the world in order to gain experience.  Thus, the chocolate globe and suitcase cake.  All of the petit fours are based off of desserts from different countries which I re-made in a smaller version and the ideas for my pralines are from trendy taste combinations in the food world today.
